A lot of meals for our family of 2 feature some grilled meat or tofu, with a side of baked veggies. The idea for one of us to eat clean and healthy is really about complimenting a daily gym routine, but for me, it’s about getting ahead of arthritis and a whole host of auto immune issues. But the whole grilled meat and veg routine can get awfully boring – so today afternoon, I tried something a little different.
Anyone who has ever had a well made kebab or nargisi kofta knows that ‘protein stuffed inside protein’ = delicious! So here’s my humble version, that’s quite tasty and moist, and only requires about 20 minutes of active hands-on cook/prep time.
400 gms Chicken Mince
1/4 -1/3 cup chopped cilantro
1/4 cup chopped onion
Salt and Seasonings to taste
1 slice of chopped bread or breadcrumbs
1 egg [raw]
4 eggs [soft boiled, peeled]
Flour for dusting eggs
1 – 2 tsp oil
Procedure: Mix in chicken, 1 egg, cilantro, onion, salt and seasonings and bread/breadcrumbs.
Make sure the mix is not too sticky.Dust soft boiled eggs with a little all-purpose flour [maida].To cover the eggs, take ball of mince [1/4 of the mixture] and flatten in hand and then gently wrap around the egg.
Cook in a nonstick or cast iron pan with minimal oil on medium heat for 8 – 10 minutes, turning occasionally.
Alternatively – you can make this in the oven. Pre-heat to 450F and cook for 5 minutes, then turn it down to 375 F for another 5-8 minutes.
